At Natural Gardens, the food grown on-site is more than merely produce; it plays a vital role in the property’s identity and guest experience.
What’s Grown
We cultivate many vegetables (lettuce, tomato, cauliflower, broccoli, cabbage, peppers, herbs and others), hops, blueberries, strawberries, grapes, goji berry, elderberries, raspberries, haskap, asparagus, horseradish, garlic, jerusalem artichokes, rhubarb, potato& ramp directly on the property.
These foods are grown in ground, in raised beds and using Aquaponics in our greenhouses.
We utilize these foods in our restaurant, The Ponds Restaurant at Natural Gardens.
Why It’s Special
Farm-to-table integration: Having produce grown on-site means the food served is extremely fresh and intimately tied to the property.
Sense of place: The vegetables, berries, hops & other fruits reflect the land, the soil, and the climate of this Catskills location — which strengthens the authenticity of the experience.
Sustainability and self-reliance: Growing much of the food on-site reduces dependency on outside supply chains and aligns with a more sustainable, locally rooted approach.
Experiential richness: For weddings or events held here, guests are not just surrounded by scenic beauty, but also dining on items rooted in the very land they’re celebrating on. That deepens the story and ambiance.
